First Thursdays at Republique
Join us on the first Thursday of every month in a celebration of wine and food. It's hard to overstate how proud and privileged The Wine Hotel is to be working with Republique's gifted creative team led by Chef Walter Manzke.

Dinner is at 7:00pm upstairs in the Private Cellar Room. Seating is very limited.

Domaine Hubert Lignier: Examining Burgundy Through the Lens of A Master Winegrower. The domaine owns 8.30 hectares principally in the villages of Morey Saint Denis (where their home and the cellars are located), Gevrey Chambertin and Chambolle Musigny. Recently, the Ligniers have expanded their holdings to include parcels in the appellations of Nuits Saint Georges and Pommard. Traditional vinification practices are the core of their work: grapes are destemmed and fermentation takes place in open-top cement tanks that allow manual pigéage. Only natural yeasts are used. Hubert’s son, Laurent, uses an extended cold soak maceration period prior to fermentation to allow greater extraction (contrary to his father who believes that the best extraction takes place during the alcoholic fermentation). Fermentation is rather long and generally lasts 15 to 20 days following the cold soak of 5 days. The use of new oak for the élevage is carefully restrained; the norm being approximately 20% to ­ 30% on the village wines and up to 50% for the Premier and Grand Crus. The wines of the village appellations usually spend 18 months in barrel while the Premier and Grand Crus remain in cask for 20 to 24 months before being bottled, all without fining or filtration. All work in the cellar that requires movement of the wine is done by gravity; the wines are never pumped.

Join us to welcome back to Los Angeles Monsieur Geoffroy Loisel, President of Billecart-Salmon USA. Chef Walter Manzke is preparing a special holiday inspired menu to accompany 4 decades of bubbles. Billecart has been under family management since its founding in 1818. Sourcing from 320 hectares of contracted and owned vineyards, annual production is 2 million bottles of a dozen champagne crus allowing vinification at 140% of actual production, with lesser parcels sold off to maintain quality. Long-aging, extremely cool and long fermentation, low dosage, large stocks of reserve wines, strict vineyard management, a genius chef de cave in Francois Domi, and two fanatical brothers Antoine & Francois Roland-Billecart keeping good order -- all these elements contribute to wines of crystalline purity that in time open out into generous detail. Antoine is famous for saying, "We are not very focused on marketing. Vinification is the key for us, and all the rest  is bullshit."

  2. We offer free storage for all the wine you buy from us for up to one year.

  4. We charge California Sales Tax on all wine, beer, cider, and accessories sales without exception. As our client you take full possession of your purchase in the state of California, even if it ultimately is shipped to an out-of-state residence or business. This means that you will be shipping your wine to yourself according to your state’s laws governing shipment of wine. We understand that our practice is not the norm in the retail wine trade, but we believe it is the only responsible position. By example, New York State is a ‘reciprocal’ state, as is California, so it is legal for us to ship wine between the two. The catch-22 even big online wine retailers don’t want you to think about is that New York State requires out-of-state retailers to register with their State Liquor Authority, pay an annual license fee of some $8,000.00, and provide detailed sales reports 18 times per year of all sales shipped into New York State. Recently, New York State sued one of the largest wine internet retailers, The Wine Library of New Jersey, for selling and shipping wine to New York State residents without a license.
  5. We only ship wine within the state of California. We are happy to help you arrange your own shipping by packing your wine in FedEx- and UPS-approved wine shippers (no charge for packaging). You can either email us prepaid shipping labels or simply email us your FedEx or UPS account number and will we affix handwritten labels to your packages. We also request that you inform your shipper of when you want your package(s) picked up at our facility where it will rest in our temperature and humidity controlled warehouse until departure.
